Observed multiple time/temperature control for safety (TCS) items stored in make table bottom held above 41F. Corrective Action (CA): Person in Charge (PIC) instructed to ensure all TCS items are held at 41F or below. Affected items discarded. COS. REPEAT.
6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed multiple TCS items on make line held using time as a public health control (TPHC) held past discard times or not labeled with discard times. CA: PIC instructed to ensure all TCS foods held using TPHC are labeled with discard time and discarded at indicated 4 hour time. Items past time discarded and items unlabeled labeled with discard time. COS.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed make table cooler bottom currently incapable of holding TCS foods at the proper temperature. PIC instructed to not use unit to hold TCS items until verified to hold proper temperature. REPEAT.
