Observed sour cream, assorted seasonings, cut tomatoes, and sauces uncovered in reach in cooler and storage area in kitchen. CA: Unless cooling, cover food. COS: Items were covered during inspection.

Observed floors and walls in kitchen area in need of cleaning. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. All areas shall be thoroughly cleaned.

Observed a handwashing sink was being used for other purposes other than handwashing. A handwashing facility may not be used for purposes other than handwashing.

Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Rice observed to be 55 degrees F in reach in cooler. RIC appears to be fluctuating in temperature. Items 41 F or below were relocated to freezer for RIC to be repaired or temperature observed to maintain 41 F or below. Rice was discarded by PIC.

Observed multiple wet wiping cloths on tables in kitchen. COS: Cloths moved to sanitizer. Corrective action: Wet wiping cloths shall be stored in sanitizer when not in use.

Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Rice observed to be 79 degrees F in reach in cooler. Rice was discarded by PIC.

Observed no date marking procedures throughout facility. COS: After discussion with manager, items allowed to be date marked. Ensure TCS foods held over 24 hours are date marked
