Observed a half-gallon of fat-free milk and a half-gallon of whole milk stored uncovered in the reach-in units. Unless food is cooling all packaged and unpackaged food need to be stored covered to protect from overhead contamination. Put the caps on the milk gallons when not in use.

Observed a container of sugar that was removed from it's original packaging without a label. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. Place a label on the food ingredient.
17B - garbage/refuse properly disposed; facilities maintained

Observed the dumpster lids open with trash being stored inside. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: With tight-fitting lids or doors if kept outside the food service establishment. Close the dumpster lids.
