Observed Leg quarters (134°F) and sausage link (123°F) below 135°F inside the warmer cabinet. The food items were placed inside 15 minutes ago. The unit lost power. PIC powered the unit back on. The brisket inside the bottom portion of the unit was above 135°F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F. COS: Person in charge had employee remove the food items from the warmer cabinet and place them back inside the steamer to reheat to 165°F or above.
