Observed an employee with a beard longer than one-half inch mixing and prepping Italian ice together without a beard restraint. Employees handling foods shall wear a beard restraint to restrain loose hairs if beard is longer than one-half inch. Obtain beard restraints.

Observed employee mixing and prepping Italian ice together without removing their watch or bracelets. Food handlers cannot have anything on their wrists including medical bracelets. Have employees remove all items from wrists before handling foods.

Observed no employee health documentation as it relates to employee's health and foodborne illness for the employee working today. The permit holder shall require food employees and conditional employees to report to the CFSM and person in charge, information about their health and activities as they relate to diseases that are transmissible through food. A food employee or conditional employee shall report the information in a manner that allows the CFSM and person in charge to reduce the risk of foodborne disease transmission, including providing necessary additional information, such as the date of onset of symptoms and an illness, or of a diagnosis without symptoms, if the food employee or conditional employee. Have all employee aware of foodborne illness and record keeping.

Observed no thermometer inside of the reach-in cooler to determine the ambient air temperature. In mechanically refrigerated, a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit. Please place a thermometer inside the unit.
