Observed no procedures for cleaning vomit and stool during the inspection today. A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Corrected on Site (COS): A copy of the procedures were provided to the establishment today.

Observed the two-door reach-in cooler in the front service area with an ambient air temperature of 50°F. No Time/Temperature Control for Safety (TCS) foods were inside the unit today. Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Have the unit serviced/repaired as soon as possible.

Observed salt, sugar, and flour out of its original container unlabeled. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. Observed food handler prepping cinnamon rolls without a beard restraint. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Obtain beard restraint.

Observed employee water bottle stored on the prep table and open coffee mug stored on the dough mixer inside the main kitchen. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. Person in charge relocated the items.

Observed no sanitizer in facility. Person in charge (PIC) states they are out of sanitizer. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times shall be kept at the facility at all times to ensure proper wash, rinse, and sanitizing of food contact surfaces and utensils. PIC states manager will be bringing quat sanitizing tablets later today.

Observed wet wiping cloth on a rolling cart in the back kitchen prep area. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution. Keep wiping cloths in a sani bucket with sanitizer only. Dry wiping cloths on counters are allowed.

Observed a heavy brown substance on the inside of the ice machine in the main kitchen. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Please empty ice machine, and clean the unit thoroughly.
