Regulation: 511-6-1.04(5)(d) - non-continuous cooking of raw animal foods (p, pf)
Observed par-cooking chicken wings without approved procedures in place. Advised PIC when using a non-continuous cooking method, procedures shall be submitted and approved prior to implementing process. Advised to obtain procedures and submit for approval.
