Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Hot water sanitizing dish machine final rinse not reaching proper temperature at manifold. Observed 146F hot water sanitizing step. Need 180F at the manifold / 160F mixed (surface temperature). CA: Use manual sanitizer observed at 200 ppm QAC until dishwasher reaches proper temperature.
