Observed several site made sauces holding at a temperature greater than 41 F. CA: TCS foods must be held at 41F and below. COS: More than 4 hours out of temperature therefore discarded.

Observed eggrolls in cooler at a temperature greater than 41F. CA: TCS foods must be cold held at 41F or below. COS: Eggrolls out less than 4 hours therefore placed in freezer to rapidly cool.

Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed TCS foods utilizing time as a public health control without discard time. CA: TCS food utilizing time as a public health control must have discard time 4 hour from when food removed from control. COS: Sauces were discarded.
