6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Reach-in-cooler next to dry goods shelf is not maintaining cold holding temperatures of 41F or less. See temperature observations. PIC voluntarily discarded out of temp items. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41F or less. Repair or replace RIC - RIC must be repaired to be able to maintain 41F or less. Do not put time/temperature control for safety foods in the RIC prior to it being repaired or replaced.
1-2B - certified food protection manager

CFSM certificate expired 3/2/24. PIC stated she is going to attend a Certified Food Safety Manager class in the fall.
2-2D - adequate handwashing facilities supplied & accessible

Handwashing in 2-comp sink that is used for warewashing. Food employees shall clean their hands in a handwashing sink and may not clean their hands in a sink used for food prep or warewashing.

Handwashing sink is in disrepair, not being used, and blocked with a tray. At least one handwashing sink shall be provided and maintained in accordance with the Georgia Food Code.

Door in food prep area being left open due to not being self-closing. Outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors, or 16 mesh to 1 inch screens or air curtains.

Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Pests observed on dry goods shelf and under sink area. PIC stated they have had pest control servicing the facility, last visit was 8/16/24, and they are treating for the pests - see attached invoice. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises in accordance with the Georgia Food Code.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Buildup of food residue on nonfood contact surfaces and grease buildup behind fryer area. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
