Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several food items stored in the walk-in cooler and cold holding unit in the main kitchen area not date-marked. Corrected Action (CA): Ensure all TCS/ RTE food items are properly date-marked with the discard time. If kept for more than 24 hours.

Observed cooked wing not discarded after the discard time (11/10/2025). CA: All TCS/RTE shall be date-marked and kept for not longer than 10 days. COS: All concerned foods were discarded.

Observed food boxes stored on the floor of the walk-in freezer. All food items shall be stored 6 inches off the floor. All boxes shall be removed by 11/19/2025

Observed food employees without a beard net in the kitchen at the line. Ensure that food employees wear proper hair restraints. COS: A bear net was used as protection

Observed several pans/buckets wet stacking in the main kitchen and glass at the bar area. Ensure all equipment, container utensils are clean and sanitized, and fully air-dried. COS: All equipment was put in the dish area to be wash

Observed boxes of single-service items stored on the floor. They must be 6 inches off the floor.
