6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several food items- Whipped cream, half and half, cut tomatoes, lettuce, cheese, not date marked. Corrective Action (CA): Ensure all time/temperature control for date-marked items with the open date when held longer than 24 hours. Also, foods can only be kept for 7 days (RTE/ TCS foods).
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed a box of food stored on the floor inside the walk-in freezer. Ensure all food items are stored 6 inches off the floor. COS- food boxes were removed from the floor.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(n) - covering receptacles (c)
Observed that the door and lid of the dumpster were not closed after last used.
17C - physical facilities installed, maintained, and clean
Damaged FRP at wall between 3 comp sink and dishwasher. Seal joints, junctures, corners and repair FRP to provide smooth cleanable surface.
