Observed several food items- sausages, French toast bread, potatoes- not held at 135°F or above as required at multiple areas. Font service steam table and pass-thru cabinet (left and right). Time/ temperature control for safety (TCS) food shall be maintained at 135°F or above. Time as a temperature control was used so the person in charge can maintain services. Since the person in charge Stated foods were cooked at 10 am, no foods were discarded during the inspection.

Past-thru cabinet left and right must be serviced because they were not able to maintain food at the proper temperature for hot holding. Ensure units are serviced and email the report to the health authority. Maintained a temperature log of 2 2-hour periods for past-thru cabinets until units are repaired.
