Observed food items not properly sealed or covered in the store in coolers around the main kitchen. Corrective action: Ensure foods are covered or resealed properly when they are in the cooling process. corrected on-site: all concerned foods were covered or properly resealed during the inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed ice bins (server area), the inner surface, and a mold-like substance (ice bins). CA: all food surfaces shall be clean and sanitized frequently to prevent the buildup, accumulation of mold-like substances. All concerned surfaces shall be clean and sanitized by 10/31/2025

Observed the scoop stored in the floor bucket with the handle touching the floor. the handle part shall not touch the food.

Observed that several containers stored on shelves in the dishwasher are stacking wet. ensure to fully air-dry them before stacking them vertically.

observed single service items stored on the line shelf not inverted or protected from contamination as required.

Observed Pelling rack in the 2-door reach-in freezer (line)

Observed several gaskets around the hot drawer and cooler not in good repair. Must be replaced.

No proper temperature measuring device for the dishwasher

Observed several equipment (oven, griddle, gill, and conventional oven) not free from food debris and grease as required

Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed computer lines above the chicken prep area with a buildup of dust, and a wall under the dishwasher table with a black slime stain. Ensure all floors, walls, and ceilings are clean frequently to prevent buildup.
