Observed chili base and beans in steam well that was not turned on. Chili reading 52F, per discussion with CFSM and time documentation chili was within time parameters. Corrective Action: CFSM was notified, steam well was turned on to allow chili to cook.

Observed several bags of raw beef patties with use by date of 9/12 and inspection performed on 9/13. Corrective Action: CFSM was notified, CFSM discarded raw beef patties. Discussed implementing FIFO.

Observed improper cold holding of TCS food items (raw burger meat) above 41 degrees at cooler without active time control. Raw burger meat temperature ranged from 51-47 degrees. Corrective Action: CFSM was notified, per discussion with CFSM food was within time parameters and was taken to walk-in cooler to aid in rapid cooling. Discussed raw burger meat cold holding temperature is to be 41 degrees or below.
