Regulation: 511-6-1.05(3)(a) - cooling, heating, and holding capacities (pf)
Observed facility with multiple cold holding units over packed limiting circulation throughout the unit. COS: PIC reorganized cold holding units based on TCS and Non TCS food products. CA: Ensure that all staff understand what TCS foods are and which foods must be held at 41F or less to ensure those foods take priority locations in cold hold units and non TCS foods are stored to not impact air circulation in cold hold units.
