Observed two cutting boards being stored on the floor in the main kitchen (base) at the time of this inspection. COS: Manager removed items from floor. CA: Cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored in a clean location at least 6 inches (15 centimeters) above the floor.

Observed chlorine test strips where expired (in base) at the time of this inspection. CA: Chlorine test strips must be in date.

Observed that facility (mobile) did not have test strips at the time of this inspection. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.

Observed two containers with tomato sauce and diced tomatoes with a label dating 12/02/2024 being cold held past their seven day usability with good condition safe food in a reach-in cooler in the main kitchen area of base at the time of this inspection. COS: Manager discarded food. CA: Time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after seven days of being outside it's original container.

Observed during the course of this inspection that the mobile unit does not have the permit number or address of the base displayed on the unit. CA: Owner stated that the will adjust signage to display both the permit number and address of the base.
