Observed facility was using TPHC without thermal carafe (with half & half creamer) was out of temp (57F) in front food service area at the time of this inspection. COS: Discarded. CA: If time without temperature control is used as the public health control for ready to eat TCS food the food shall be marked or otherwise identified to indicate the time when the food is removed from 41°F (5°C) or less cold holding temperature control; and the time that is 4 hours past the point in time when the food is removed from cold holding temperature control.

Observed a box with moldy strawberries being cold held in the walk in cooler at the time of this inspection. COS: Discarded. CA: Moldy/spoiled food shall not be stored in the facility.
