4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed during the course of this inspection that the facility dishwasher was not dispensing sanitizer. COS: Service Technician restored sanitizer flow. CA: Glynn EH instructs management to test the chemical supply daily and ensure that the machine is dispensing an adequate amount of chemical sanitizer. (Chlorine/50-100ppm is ideal)
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed during the course of this inspection that the facility had "Reduced Oxygen Packaged"(ROP) fish completely thawed inside of the package. COS: Fish was discarded. CA: Glynn EH instructs management to ensure that all "ROP" fish is completely removed from the packaging before thawed.
