Observed three knives being stored on magnet with food debris on food contact surface in the main kitchen at the time of this inspection. COS: Knives sent to wash. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Observed two whisks and a spoon being stored in standing water (72 F) in a dipper well and faucet sink with faucet closed in the main kitchen at the time of this inspection. COS: Management sent items to wash and opened faucet on dipper well. CA: Food preparation and dispensing utensils can be stored in water only if water is running with sufficient velocity to flush particulates to the drain; or in a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned frequently.

Observed a stack of coffee filters being stored uncovered/unprotected in a dusty surface on top of coffee machine in the main kitchen at the tie of this inspection. COS: Management discarded coffee filters. CA: Single-service and single-use articles shall be stored in a clean, dry location, where they are not exposed to splash, dust, or other contamination; in the original protective package or stored by using other means that afford protection from contamination until used.

Observed Quat. sanitizer was below the allowed concentration range of 200 ppm - 400 ppm in the kitchen area at the time of this inspection. COS: PIC replaced sanitizer. CA: Sanitizer shall be measured periodically using test strips to make sure concentration is between 200 ppm - 400 ppm.

Observed two containers (cocoa and chai) with scoops handles touching food in the kitchen at the time of this inspection. COS: PIC removed and washed scoops. CA: Scoops should be stored with handles facing up as to avoid contaminating food items.
