Observed that facility did not have test strips for chlorine sanitizer at the time of this inspection. COS: EHS provided manager with some test trips to use while he gets more. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.

Observed sanitizer in all sani-buckets in an extremely high concentration at the time of this inspection. COS: Manager remade the sanitizer CA: Manager stated he will ensure sanitizer is tested every time it is made.
** BASE VIOLATION ** Observed facility did not have a copy of their inspection or permit visible at either the base or mobile at the time of this inspection. CA: Manager stated he will ensure permits and inspections will remain on the wall at both the base and mobile.

Observed single service trays and plates stored in a way that does not prevent contamination of the food contact surface at the time of this inspection. COS: Manager inverted the items. CA: Manager stated he will ensure these single service items will be properly stored.

Observed during the course of this inspection that the food truck "clean water hose" was being stored in an area outside with significant dust and debris around it. CA: Management stated that the hose would be cleaned and sanitized before further use and would be stored inside an area that allows for more protection from potential contamination.

Observed during the course of this inspection that the entrance door for the food truck has a significant gap located at the bottom of the door. CA: Management stated that the door will be repaired so that there is no gap and the door is tight fitting.
