6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed two TCS items on the hot holding table below 135 degrees.C/A Advised manager to keep monitoring the temperature of all TCS foods to ensure that they do not fall below 135 degrees until the unit is repaired or replaced.

Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed that there was no thermometer in the reach in chiller.C/A Advised manager to provide a thermometer within the cooler as soon as possible.
