At the time of the routine inspection, observed several TCS foods stored in a prep top refrigerator unit or in a improper ice bath set up (see temperature chart) that had internal temperatures above 41F. Per employee, food items were stored in ice baths and refrigerator units less than 4 hours prior to the inspection. Food items were relocated to working reach in refrigerator units and/or stored properly in ice bath set up during the inspection for correct cold holding. Ensure TCS foods are held cold at 41f and below.
