Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Observed failure to produce a clean up kit for vomiting and diarrheal events. CA: PIC was emailed the clean up procedure for the use of bleach. (6) Responding To Contamination Events. A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter.Pf

At the time of the routine inspection, observed food labels missing on food containers under the prep table located in the dishwashing area of the main kitchen. CA: Advised PIC to label food items. Ensure items not in its original container are labeled as to its content.
14B - utensils, equipment and linens: properly stored, dried, handled

Observed food containers wet stacked in the main kitchen warewash area. CA: Advised PIC that food containers should be placed in a self-draining position that allows air drying after being cleaned.
