4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed interior surfaces of the ice machine with black mold like build up. PIC was advised to clean the ice machine and set up routine scheduling to prevent the accumulation of build-up and maintain cleanliness.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several items such as salmon and tuna in the reach in cooler in the main kitchen without proper date marking. CA advised PIC to label and properly date mark all items stored in the reach in coolers.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed chemical dishwasher in the main kitchen not dispensing the appropriate amount of chemical required to properly sanitize food contact utensils. The test strip read 10 ppm chlorine. CA advised PIC to have Ecolab come and do maintenance in order to get the dish washer up to correct sanitizer levels.
17C - physical facilities installed, maintained, and clean

Observed missing ceiling tile in the dry storage area above food contact surfaces. CA advised PIC to have maintenance come and place a ceiling tile.
