1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed ServSafe certificate posted is for an employee no longer working at the facility. No one currently certified in food safety. Corrective action - PIC advised that she would register for food safety manager exam. Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection.
4-2B - food-contact surfaces: cleaned & sanitized

Observed dark spots on beverage nozzles at Coke machine in dining area. Observed food residue on can opener blade stored at prep table near 3-compartment sink. Corrected on site - beverage nozzles and can opener relocated to 3-compartment sink for cleaning. Equipment, Food-Contact Surfaces, and Utensils.
- Equipment food-contact surfaces and utensils shall be clean to sight and touch.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employees engaged in food preparation in main kitchen area without proper hair restraints. Corrected on site - employees donned hair nets.
Hair Restraints.

Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.

This does not apply to employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food, clean utensils and linens and unwrapped single-service and single-use articles.
