Inspector observed employee beverage rack over prep sink and prep table. COS - PIC removed beverage rack and placed by dish pit until a suitable location can be found. Corrective action: Store employee beverage rack in an area where they cannot spill onto food or work surfaces.

Inspector observed wet wiping cloths not stored in bucket; laying on edge of bucket with sanitizer solution. COS - PIC fully submerged wet wiping cloths. Corrective action: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n).

Inspector observed utensils wet stacked as clean. Corrective action: Clean equipment and utensils shall be stored in a self-draining position that allows air drying and Covered or inverted.

Observed employee beverage rack over prep sink. Advised PIC to move rack to an area where if the spilled the beverages would spill onto food or work surfaces. COS- beverage rack was relocated during the inspection.

Observed food handlers not wearing effective hair restraints. Advised PIC that hair net is required with visors and beard nets are required for beards longer than 1/2 inch. COS- food handler changed to wearing hat as effective hair restraint.

The most current inspection report is not prominently displayed in public view, within 15 feet of the front or primary public door and between five feet and seven feet from the floor or in an area where it can be read at a distance of one foot away.

General cleaning needed for walk-in floors and the dish washing area floor and walls. Advise PIC to deep clean as often as necessary to avoid grime build-up.
