Regulation: 511-6-1.04(4)(z) - miscellaneous sources of contamination (c)
Inspector observed employee beverage rack over prep sink and prep table. COS - PIC removed beverage rack and placed by dish pit until a suitable location can be found. Corrective action: Store employee beverage rack in an area where they cannot spill onto food or work surfaces.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Inspector observed wet wiping cloths not stored in bucket; laying on edge of bucket with sanitizer solution. COS - PIC fully submerged wet wiping cloths. Corrective action: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n).
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Inspector observed utensils wet stacked as clean. Corrective action: Clean equipment and utensils shall be stored in a self-draining position that allows air drying and Covered or inverted.
