Observed hot water sanitizing dishwashing machine final rinse not reaching proper temperature at manifold or utensil surface. At the start of the inspection, the dishwashing machine was running and being used by food service employees. PIC reported the machine's final rinse temperature has been fluctuating and switched to the three compartment sink during the inspection. The final rinse temperature on the machine reached a maximum temperature of 170 deg F at the manifold and later dropped to 142 deg F. After calibrating multiple thermometers and testing the machine at utensil surface, the final rinse temperature did not exceed 158 deg F.
Corrective Action: Discussed required hot water sanitization temperatures with PIC. Due to the machine not reaching 180 deg F as it enters the manifold or 160 F at the utensil surface, the machine was placed out of service and the facility will use the three compartment sink until the machine is repaired. The dishwasher must be serviced by a licensed technician and rechecked by the Health Department prior to use. Documentation of the service and repairs must be provided for review. Observed sanitizer buckets not at the proper parts per million for cleaning and sanitizing. CA: PIC will utilize test strips to ensure sanitizer is made properly to reach the correct ppm.

Observed ice buildup on units in walk in freezer and on a box with food. No food contamination involved. CA: PIC placed trays to collect melting/falling ice. PIC will have freezer serviced and will contact Health Department to have freezer rechecked.
