Observed internal final rinse temperature of high temperature dishmachine not consistently reaching 160 degrees Fahrenheit. Final internal rinse temperature of high temperature dishmachine was tested multiple times with temperatures ranging from 155 degrees Fahrenheit to 162 degrees Fahrenheit. CA: Discussed final internal rinse temperatures of dishmachine and monitoring final rinse temperatures with CFSM. CFSM created a maintenance request to have dishmachine serviced. Dishmachine must be serviced by a licensed professional. The 3-compartment sink will be used to manually wash dishes until dishmachine is repaired. This will be rechecked by the Health Department.
