Observed no key drop delivery agreement or temperature logs for TCS foods delivered during non-operating hours at facility. CA: Employees shall verify that foods delivered to the food service establishment during non-operating hours are from approved sources and are placed into appropriate storage locations and maintained at the required temperatures. COS: No correction on site can be observed. PIC must ensure key drop deliveries are at temperature and placed in correct area to maintain proper temperature. Temperatures must be recorded in a verifiable manner and available upon request of health dept. This will be rechecked.
1-2B - certified food protection manager

Observed certified food safety manager supervising two separate facilities. CA: Certified Food Safety Managers must be designated to one food service establishment only. COS: No correction on site can be noted. Facility must obtain certified food safety manager designated to only one food service establishment. This will be rechecked by health dept.
12C - wiping cloths: properly used and stored

Observed two in-use wiping cloths stored in chemical sanitizer solution below required concentration. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical concentration at required concentration (Quat: 200-400ppm). COS: Sanitizer buckets were remade at correct concentration
