Observed improper cooling methods and practices for TCS food items. Previously cooked Wonton noodles were observed to be cooling in tightly sealed containers in 2 different reach in coolers of facility. Wonton noodles were measured at 45-48 degrees after over 4 hours of cooling. Corrective Action: CFSM was notified. Wontons were removed from containers and placed in freezers for rapid cooling to 41 degrees. Employees were educated on proper cooling methods in small portions and shallow, loosely covered containers. This will ensure food reaches 41 degrees within 6 hours via the 2 step method.
