14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoops without handles stored submerged in multiple food items such as mushrooms, soy sauce, and bulk dry rice. CA: Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation utensils shall be stored in the food with their handles above the top of the food and the container. Corrective Action: CFSM was notified. All improper scoops were removed and will be replaced with handled scoops stored properly in food items.
