In non-TCS foods, utensils must be stored with handles above the top of the food and container must be closed, such as bins of sugar, flour, etc. PIC removed bowl and will replace with approved utensil with handle.

Observed large prep top cooler in main kitchen unable to maintain temperature of 41 deg F or below. PIC reports the unit has been down for two weeks due to a condenser leak but it has not been repaired. The facility has been storing food in the top portion with an ice bath and do not store food overnight. Corrective Action: Discussed requirement for all equipment to be in good, working condition with PIC. PIC was allowed to use time as a public health control for the remainder of the day (4/16/25) and cooler would be placed out of service until serviced and repaired by a licensed cooler technician. Documentation will be required. Please contact the Health Department at (706)295-6316 to have cooler rechecked prior to use.
