2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Observed that the facility did not have the means/ a plan to clean up vomitous and diarrheal events. Code: Facility shall have a written plan to respond to vomitous and diarrheal events and shall have all of the items necessary for the plan.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(e) - conditions of use (p, pf, c)
observed several residential pesticides stored in the kitchen. COS. PIC removed. Code: All chemicals shall be used according to their conditions of use, including only using residential pesticides in residential settings.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed that the weather stripping at the rear exterior door was damaged and no longer allowed for the door to be tight-fitting and observed that the window in the office/storage area was not closed. CA: Exterior openings shall be self-closing and tight-fitting or other wise protected from pest entry.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed that the refrigeration unit in the front preparation area is in a state of disrepair with the gasket on the door falling off. CA: Equipment shall be maintained in a state of good repair.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(a) - materials, general requirements (p, c)
Observed that the facility is using non-food grade containers to store their food; food is stored in generic non-food storage tubs. Code: Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: safe, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Obsered heavy accumulation of ice and debris on the inside of freezers. Code:Non-food contact surfaces shall be thorouhgly cleaned and cleaning frequency shall be enough to prevent accumulation.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of grease and debris under equipment and shelves and in the coving throughout the kitchen. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee belongings stored with and above food and food contact surfaces. COS. Removed. Code: Employee belongings and activities shall be in designated locations that prevent contamination of food and food contact surfaces.
