Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed that the facility was using chlorine solution for their wet wiping cloth containers in the main kitchen area/front food service area, however, the concentration was so high that the chlorine test strip turned black and then started to bleach-out. COS. New sanitizer solution made. Code: Chemical sanitizers shall not exceed set tolerances and shall be used as required.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed that the there was an accumulation of debris, food, and grease under shelves and equipment; particularly around the legs and under shelves in the front food service area/under equipment and under/behind refrigeration units in the rear kitchen area. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
