Observed white board cleaner, liquid adhesives, cleaners, paint, and butane stored with and above food, single-use items, and equipment on the main line, in the closet area near the bathrooms, and on the shelves up against the walk-in cooler. COS. Items moved. Code: Chemicals shall be stored in a location and in a manner that prevents contamination of food and food contact surfaces.

Observed that the facility has residential pesticides (bug bombs) stored in their dry storage closet/area near the bathrooms. COS. Discarded. Code: Chemicals shall be used according to their conditions of use, including only using pesticides intended for use in commercial kitchens in the food service establishment.

Observed that employee medications/vitamins including magnesium, D3, B12, zinc, and E, are stored with and above food on the shelves in the middle of the storage area of the main kitchen. COS. Removed. Code: Medicines that are in a food service establishment for the employee’s use shall be labeled with a legible manufacturer’s label and located to prevent the contamination of food, equipment, utensils, linens, and single-service and single-use articles; and located so they are inaccessible to children.

Observed that working containers of chemicals, spray bottles, that are stored on the shelf near the rear exit are not labeled with the common name of the product. COS. Labeled. Code: Working containers of chemicals shall be labeled with the common name of the chemical inside.

Observed containers of non-easily identifiable foods that was not labeled with the common name of the product; these are the large pans of sauces and seasonsing on the line. COS. Labeled. Code: Non-easily identifiable foods shall be labeled with the common name of the product.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(m) - maintenance tools, storage (c)
Observed that maintenance tools for the facility, such as hammers, drills, and other tools, are stored with and above food on the shelves up against the walk-in cooler. COS. Moved. Code: Maintenance tools shall be stored in a location and manner that prevents contamination of food and food contact surfaces.
