Chicken Salad Chick

Observed two in-use utensil handles being stored inside of food containers on the prep top counter (fruit salad, chicken salad). COS: in-use utensil handles were stored with the handles above the top of the food. Code: During pauses in food preparation in-use utensils shall be stored in the food with their handles above the top of the food and the container.

Observed that there were sinks in the facility that did not have hot water. CA: The facility shall have adequate pressure and be able to provide hot water that meets the theoretical peak demand of the facility.

Observed wet nesting of containers. COS. Unstacked to dry. CA: Containers shall be thoroughly air dried prior to stacking.

Observed that the facility is using Purell Food Surface Sanitizer, but they do not have a means of testing it. CA: Facility shall have the means to test each type of sanitizer used in the facility.
