6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed food made more than 24 hours ago that was not date marked. COS. Dates added. CA: TCS food prepared more than 24 hours ago and opened manufactured food shall be date marked to be discarded after no more than 7 days with the day of preparation being day 1; food may be marked with the day of preparation, the day of discard, or both, however, the method of date marking shall remain consistent.
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Observed non-easily identifiable foods (sauces, spices, etc) that were not labeled with the common name of the product. COS. Labeled. CA: Non-easily identifiable foods shall be labeled with the common name of the product.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris on the inside of equipment. CA: Non-food contact surfaces shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris on floors and walls, especially under equipment and shelves. CA: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
