Observed prepared TCS foods that were not date marked and prepared TCS foods that were date marked for 8 days instead of 7. COS. Labels made and items relabeled as necessary. CA: Prepared TCS food held longer than 24 hours shall be date marked with the day of preparation, the day of discard, or both, however, the method shall remain consistent and items shall be labeled to be held no longer than 7 days with the day of preparation being day 1.

Observed that the facility had prepared a dense container of carrots that were attempting to cool and observed that the facility had prepared lasagna that was still hot and wrapped them in plastic wrap. COS. Carrots were placed into an ice bath and lasagna was unwrapped to cool. CA: Facility shall use cooling methods that are appropriate and will facilitate items cooling from 135 F to 71 F within 2 hours and from 70 F to 41 within another 4 hours.
