6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Dessert cooler dairy mix at 48F. Discarded dairy and any TCS time/temp for safety foods to COS. Air temperature at 44-48F. Call repairman for cooler maintenance. Keep dairy in Coke glass cooler until other cooler is fixed.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
steak/beef cooked strips, cooked ground beef, previously cooked chicken in hot hold wells at 109, 100 and 105*F. Water in well at 132 *F; this cannot hot hold food at 135 with water at 132 and should not be used as "reheating" mechanism. Reheat previously cooked food on grill or equipment that is designed to reheat, then hot hold at 135 or higher. Discarded products due to not sure how long in steam wells (beef strips, ground beef and chicken)
6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
Deep container of rice from 3-10-26 and beef (large, deep container) stock drippings/juice sauce at 47*F from 3-10-26. Cool time and temp for safety foods as follows: from 135 to 70 in 2 hours and from 70 to 41 in 4 more hours. Cooling shall be accomplished by placing food in shallow pans, separating into smaller or thinner portions, use rapid cooling equipment (like freezer), stirring food while in an ice water bath, using ice as ingredient or other effective methods such as ice wands/paddles. Leave lid/top/cover off during cooling. Discarded rice and sauce/juice to COS
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Replace gasket that is flapping on dessert cooler. Keep in good repair. Ice machine has parts zip tied together. Work on a maintenance call for framing and area around ice machine door to repair broken plastic areas. Keep in good repair.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(b) - outdoor storage surface, constructed of nonabsorbent material & sloped to drain (c)
Dumpster not on impervious material such as concrete pad or sealed asphalt and sloped to drain.
