4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed two cases of raw shell eggs stored over ready to eat food 1) prep cooler (upright) raw eggs over ready to eat shredded cheese 2) raw shell eggs over whole limes in walk in cooler. Raw food and ready to eat food shall be separated to prevent cross contamination by arranging each type of food in equipment so that cross contamination of one type with another is prevented. Store by temperature order highest cook temperature on bottom of cooler shelves and lowest or no cook step on highest shelves. Ready to eat on top (no cook), pork chop, fish, eggs, next shelf below top cook to 145 F, ground beef next shelf below fish cook to 155 F, chicken on bottom cook to 165 F. Shells appeared to be in tact. Food order rearranged in coolers to prevent cross contamination and correct on site.
4-2B - food-contact surfaces: cleaned & sanitized

Ice machine has accumulation on back wall. As soon as possible, remove ice then wash, rinse, and sanitize and make new ice. Can opener also has debris. Clean both often enough to prevent residue.
10D - food properly labeled; original container

Bulk food found not labeled in containers. Flour, salt, garlic powder removed from original packaging placed in buckets not labeled with common name. Food taken from original containers is to be labeled with common name in English when placed in working containers. Labeled foods to COS
14C - single-use/single-service articles: properly stored, used

Single use articles may not be reused. Containers of salt, garlic powder, and flour stored in containers that previously came in as chicken bouillon. New containers of food that is commercially processed such as salt, chicken bouillon, ketchup, etc. are not to be reused for storage of food due to these are not necessarily rated to withstand wash-rinse-sanitize steps repeatedly over time.
17B - garbage/refuse properly disposed; facilities maintained

Dumpster lid broken. Order new dumpster or have lid replaced so that dumpster lids can remain closed. Dumpster open due to broken lid.
