Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Defrost walk in freezer where condensate builds up. Build up on ceiling of freezer. Use sheet pans or covers over boxes of food so that the condensate on top of freezer does not drip onto food when defrosting. Keep in good repair and proper adjustment.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Clean fan guards in walk in cooler (chicken) to prevent accumulation. Replace some of the shelves like in walk in cooler for pot pies that are showing rust and wear.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(k),(l) - storing refuse, recyclables & receptacles; areas, enclosures, & receptacles, good repair (c)
Dumpster lid broken (can't keep closed). Replace lid or dumpster so that top can be closed to prevent insects, pests, vermin, etc.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Floors have residues and standing water. Clean wall behind 3-compartment sink-residue built up. Clean at a frequency to prevent build up and standing water. Some soda syrup drips near back ice machine. PIC had employee to begin clean up of soda drips.
