Observed dirty rag stored on shelf near to-go items. COS: PIC removed rag and put it in the dirty rag bucket. Cloths in-use for wiping counters and other equipment surfaces shall be:
(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and
(ii) Laundered daily.

Observed queso in hot hold unit near cash register temp at 105F after being prepped two hours prior. All TCS items for reheating must reach 165F in the first two hours. COS: PIC discarded food items. Except as specified under paragraphs 2, 3, and 5 of this subsection, time/temperature control for safety food that is cooked, cooled, and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 165°F (74°C) for 15 seconds
