Observed raw chicken above raw pork, raw beef and large container of sauce; raw pork above containers of cooked chicken, and raw chicken directly on top of container of raw sauce in walk in cooler; raw shell eggs behind cooked pork in prep top cooler of grill prep area. CA: Foods must be protected from contamination from raw animal foods vertical storage and cooked ready-to-eat food. COS:PIC stored raw chicken on the bottom and raw meats below ready to eat foods

Observed several missing or damaged floor tiles in the grill cook area, in prep area under kitchen equipment, near back door and in dishwashing area of main kitchen. CA: Floors shall be constructed of smooth, durable easily cleanable material. PIC will repair flooring by October 2026.
15C - nonfood-contact surfaces clean

Observed excessive buildup of oil/grease solidified and food debris on sides of cooking equipment and on floors underneath equipment in grill prep area, food residue on walls in grill prep area and on wall across from dish sink in main kitchen. Observed excess solidified grease build up on hood filters CA: Nonfood contact surfaces shall be maintained clean.
