Observed hot water faucet non-functioning at the vegetable prep sink. CFSM stated hot water supply is adequate but is turned off when not in use due to a continuous leak when hot water line is on. CA: A plumbing system shall be repaired according to law; and maintained in good repair. PIC will have leak fixed.

CA: Soiled receptacles and waste handling units for refuse, recyclables, and returnables shall be cleaned at a frequency necessary to prevent them from developing a buildup of soil or becoming attractants for insects and rodents. PIC will have the area cleaned.

Observed a cup being used as a scoop in the cereal container. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container. PIC removed the cup from the container.

Observed cardboard being used on the floor under the oil containers. CA: Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: P safe P, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated ware washing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition. PIC discarded the cardboard.

CA: Except as specified under subsection (2)(d) of this Rule and except for antislip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. PIC will have the floor tile repaired.

Observed the coving in need of repair on the right-side drive thru behind the drink dispenser. CA: In food service establishments in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch (1 mm). PIC will have the coving repaired.

Observed ice bins on drive-thru not clean to sight or touch. CA: Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. PIC will have the ice bins washed and sanitized.

Observed no test strips at the three-compartment sink. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.PIC will provide the three compartment sink with test strips.
