Observed meatballs inside of a reach-in-cooler at a temp above 41 degrees Fahrenheit. C/A: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C). PIC removed the meatballs and cooled them down to a desired temp below 41 degrees.

Observed the fume hood not cleaned. C/A: . Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. PIC will clean the fume hood.

Observed the scoop handle being stored in contact with the rice. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container. PIC repositioned the scoop handle to prevent contact with the food item.
