Observed leak at the bottom of the handwashing sink. CA: A plumbing system shall be repaired according to law; P and maintained in good repair. PIC will have sink repaired.

Observed single service plates in storage area not kept in original packaging to prevent contamination. CA: Single-service and single-use articles shall be stored as specified under paragraph 1 of this subsection and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. PIC properly stored single service items.

Observed employee drink stored with items to be sold to customers. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. PIC removed drink.

Observed TCS food item such as chicken wings in hot holding not being maintained at 135 degrees Fahrenheit or above. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. PIC reheated the food items in the fryers.

Observed residue on top of the grease collector. C/A: Recepticle and waste handling units for refuse, recyclables, and returnables shall be cleaned at a frequency necessary to prevent them from developing a buildup of soil or becoming attractants for insects and rodents. PIC will clean grease collector

Observed TCS food item such as chicken wings in hot holding not being maintained at 135 degrees Fahrenheit or above. Observed the interior of the ice bin not clean to sight or touch. CA: Equipment food-contact surfaces and utensils shall be cleaned At a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. PIC will have the interior of the ice machine washed and sanitized.

Observed unpackaged tilapia being stored in direct contact with water. CA: Except as specified in paragraphs 3 and 4 of this subsection, unpackaged food may not be stored in direct contact with water. PIC removed the water from the container.

Observed no copy of the most current inspection report being displayed for public view. CA: The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. Food service establishments with drive-thru windows will post the current inspection report, and also have the inspection report posted so that a minimum of the top one-third of a copy of the current inspection report is visible through each window allowing customers to easily read the score, date of inspection and establishment information. PIC will display a copy of the most current inspection report in the lobby and drive thru window.

Observed the dumpster lids being stored open. CA: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food service establishment. PIC closed the dumpster lids.

Observed a molded bag of shredded cheddar cheese in the bottom of the prep top cooler. CA: Food shall be safe, unadulterated, and honestly presented. PIC discarded the food item.

Observed a gap at the top of the back screen door. CA: Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by filling or closing holes and other gaps along floors, walls, and ceilings; closed, tight-fitting windows; and solid, self-closing, tight-fitting doors. PIC will have the gap at the top of the back screen door closed.

Observed build-up of grease on fume hood. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will have the fume hood cleaned.
