Observed no paper towels at the employee handwashing sink. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel. PIC supplied the handwashing sink with paper towels.

Observed the coving in the walk in cooler no in good repair. CA: The floors in food service establishments in which water flush cleaning methods are used shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed. PIC will have coving replaced.

Observed the fumehood near the grill not free from an accumulation of grease. CA: Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will have the fumehood cleaned.

Observed food items such as shredded cheese and corn dogs being stored uncovered in the RIC. CA: Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. PIC provided the containers with lids.

Observed the interior of both ice bins and the ice machine not clean to sight or touch. PIC will wash and sanitize the interior of the equipment.
