Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple time/temperature controlled for safety (TCS) foods cold holding at temperatures above 41F, located in the walk-in cooler. Temperatures are notated with asterisks (*) in the temperature log. Upon checking, ambient temperature of the cooler was at 46F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. COS: PIC discarded all TCS foods that were out of temperature and had been in the cooler longer than 4 hours (see temperature log.).
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed the inner parts of the bun toaster unclean to sight and touch. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Advised to take apart and cleaning per the manufactures instructions (posted on wall).
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed walk-in-cooler ambient temperature at 46F. CA: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. All TCS food was discarded from cooler. Repair person arrived towards end of inspection. Inspector will follow-up early afternoon to ensure cooler has been successfully repaired and is holding below 41F (ideally 36F to 38F).
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed multiple non-food contact surfaces unclean to sight and touch. Unclean non-food contact surfaces observed included: Speed Racks & shelves inside in walk-in-cooler and the inside-bottom of the prep top cooler. CA: All non-food contact surfaces shall be kept clean to sight and touch. Advised PIC to thoroughly clean all non-food contact surfaces.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed several broken and missing floor tiles throughout facility. Missing tiles are pooling water. CA: All physical facilities shall be maintained in good repair. Advised PIC to replace floor tiles and re-grout floor where necessary.
