6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed a bag of shredded cheese and raw chicken wings cold holding at 47F located in the prep top cooler. Observed prep top cooler ambient temperature at 43F. Observed Walk-in-Cooler ambient at 39F. CA: TCS foods shall cold hold at 41F or lower. COS: PIC discarded the bag of cheese. Raw chicken wings had been in cooler less than 4 hours and were placed in ice bath. Advised not to hold TCS foods in cooler until it is holding at 41F or lower (ideally 36F to 38F). Asked PIC to email a copy of the repair invoice for the cooler.
