Observed raw cut cat fish stored above fried chicken wings inside Atosa reach in cooler. Observed fried bone in chicken wings store on top of raw tilapia and cat fish inside Atosa reach in cooler. Observed raw chicken breast stored above ready to eat food (fried chicken wings and sauces) inside prep top cooler. Observed raw chicken in different containers stored above vegetables inside the walk in cooler. CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, Cooked ready-to-eat food; Fruits and vegetables before they are washed. COS: Fish was stored below fried chicken in the Atosa reach in cooler, raw chicken breast was removed from prep top cooler and vegetables was moved away inside the walk in cooler.

Observed floors stored below grill uncovered when actively not in use. and seasoning stored at the dry storage shelves uncovered. CA: storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: Food content was fully covered.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed the back door propped open. CA: outer openings of a food service establishment shall be protected against the entry of insects and rodents by: Filling or closing holes and other gaps along floors, walls, and ceilings; Closed, tight-fitting windows; and Solid, self-closing, tight-fitting doors. COS: Door was fully closed.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed phones stored on top of the prep top cooler. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: Phone was removed and placed in a designated place.
